Yes, you can leech only that "Categories" line.

You just need to add custom selectors: http://leecher.themasoftware.com/faq.php?expand=faq206

Go to "WEBSITES" -> select that website -> "Selectors" tab -> add these selectors:

And add these replacements (enable to apply to all new leeched messages OR add them later only for this site):

Not possible the "meta" thing. It's not part of the post. Just use replacement to add the <postSubject> into message text and surround it with those words. It will be 100% the same.
